For TUTTOFOOD Exhibition in Milan, Molino Naldoni (Hall 7 Stand E25) will host some of the best food&beverage excellences of Emilia-Romagna standing out thanks to the high quality of the raw materials, their care in manifacturing process or simply for the choice of “getting it right”, naturally and with semplicity, as we like! We are already preparing for the Exhibition and insiders expectations are really high for this international date, also for us! In our stand we will offer ongoing tastings during the 4 days: Pizza Classica, Pizza in Pala alla Romana, Pizza Gourmet and… Pizza Napoletana, obviously! Thanks to the expert organization of our Technical Manager Piero Asaro assisted by Riccardo Ranfagni, new entry in our team, we will offer to the TuttoFood visitors high hydration doughs from medium to long fermentation. Thanks to our 100% natural types of flour, different for milling recipes, you can taste classic, semi whole-wheat and whole-wheat doughs, but also special doughs enriched by other cereals, branparts and seeds, in line with the healthy consumers. Steaming pizzas that enhance the wheat flavour which is the fruit of different careful milling techniques.

The protagonist of our stand will be Smorfia the new Soft Wheat Flour Type 0 for Neapolitan Pizza, 100% from Italian Wheat approved by the Verace Pizza Napoletana Association. Born by a very high quality of wheat, Smorfia is the Molino Naldoni Flour dedicated to the professional pizza chef that ensures a light and soft dough, with high hydration and long fermentation. With 60/65% of hydration, Smorfia realise wonderful dough with 30 hours of fermentation in a controlled temperature, perfect for baking at 400/450 degrees Celsius for 90 seconds. As it was requested from the policy document of the Verace Pizza Napoletana Association. Our Smorfia is going around the world by receiving cheers from the most demanding professional pizza chefs, italian and international: from Paris to Nürnberg, Dubai and Mumbai as well as Naples and all Italy from north to south! Selected from the Better Future Award 2023 category packaging finalists, on Tuesday 9 May we will know all the details at the awards ceremony!

– Case Bianche of Russi, with extra-vergine olive oil obtained by the best olives of the Costa degli Dei (Calabria).
– Amarcord indipendent family brewery of Romagna that proposes a natural product of high quality and a history made of technology, passion and tradition.
– Caseificio Aversano our hystorical partner of Campania, the only one which is not located in our region, standing out for the exclusive use of natural ingredients and milk from the selected stables, that uses working methods and artisanal treatments without using preservatives or additives.
