Marì - TYPE ‘00’

This flour is a blend of different high quality wheat which produces a soft, easy-to-work dough characterized by very high hydration levels and long leavening times. This results in a finished product with large pores. It is excellent for preparing leavening starters such as biga, poolish and sourdough.
